These sweet potato fries are gluten free, dairy free, and are low FODMAP in serving sizes of 75 grams.

- 1 large Sweet Potato (around 375 grams)
- 1 tbsp of Corn flour
- 1 tbsp of Olive Oil
- 1/4 tsp of Salt
- 1/4 tsp of Turmeric
- 1/4 tsp of Paprika
Preheat the oven to 200 degree Celsius. Start by peeling the sweet potato and chopping it into long thin slices. Try to make sure the chips aren’t too thick, as this can make it harder for them to crisp up in the oven. Place the chopped sweet potato into a bowl, add the cornflour and salt, tossing the chips gently to allow the cornflour to lightly cover them. Then drizzle the olive oil evenly over the chips. Lastly add the seasoning, of paprika and turmeric and once again toss the chips to make sure they are evenly seasoned. Place the chips into a large baking tray, and place in the oven for 30 minutes or until fully golden.
If following a low FODMAP diet, then be aware that sweet potato is high in mannitol in serving sizes over 75 grams, so these chips would be a perfect side dish. If you know you can digest mannitol then these chips will be fine to eat in larger serving sizes as all other ingredients are low FODMAP.
