Flourless Chocolate Cake

This flourless chocolate cake is low FODMAP, cane sugar free, gluten free and low lactose

Serves: 6 (1 slice per serve)


  • 100 grams of Dark Chocolate
  • 1/4 cup of Butter
  • 1/4 cup of Coconut Oil
  • 3/4 cup of Rice Malt Syrup
  • 3 free range Eggs
  • 1/4 cup of raw Cacao Powder
  • 1/2 tsp of Vanilla Extract
  • 1/35 tsp of Stevia Extract (optional)
  • Sprinkle of Salt


Preheat oven to 180 degrees Celsius and grease a medium sized cake pan. In a bowl over a pot filled with simmering water melt together chocolate, butter and coconut oil until fully combined. Whilst this mixture is melting, in another bowl whisk together the eggs until bubbly on the surface. Once chocolate mixture if fully melted and combined, remove from the heat and stir through the rice malt syrup, stevia, vanilla extract and salt. Once cooled slightly, whisk eggs slowly through the chocolate mixture. Finally add the cacao powder and stir to combine. Pour the mixture into the prepared cake tin and bake for 20-25 minutes or until fully cooked. Serve warm or cool.
