
These cookies are Low FODMAP & gluten free
Serves: 12 (1 cookie per serve)
Ingredients:
- 100 grams of Butter- softened
- 1/2 cup of White Sugar
- 1 Egg
- 1 tsp of Vanilla
- 1/3 cup of Gluten Free Flour
- 1/3 cup of Tapioca Flour
- 1/3 cup of White Rice Flour
- 1/3 cup of Brown Rice Flour
- 1/2 tsp of Baking Powder
- 1/2 tsp of Baking Soda
- Sprinkle of Salt
- 1/2 cup of Cocoa Powder
Method:
Preheat oven to 180 degrees Celsius, then line a cookie tray with baking paper. Start by creaming together the butter and sugar in an electric mixer, this may take a few minutes. Once creamed add the egg and vanilla, mixing until combined. In a seperate bowl sift all of the flours, baking powder, baking soda, salt and cocoa together. Slowly add the flour mixture into the creamed mixture, until a dough is formed. Then roll the dough into 12 balls and place on the prepared cookie tray. Flatten with a wet spoon and place in the oven. Bake for around 10 minutes, then remove from the oven and allow to cool on the cookie tray for a further 5 minutes. Then transfer onto a cooling rack.
